BOSTON -- USA Rice Federation promoted the nutritional benefits of U.S.-grown rice at the 93rd Annual American Dietetic Association Food and Nutrition Conference this week. Dr. Keith Ayoob, a pediatric specialist at Albert Einstein College of Medicine and a member of USA Rice's Scientific Advisory Panel, headlined an education session on rice nutrition benefits for children.
USA Rice hosted an exhibit, distributed rice information and recipes and surveyed 100 dietitians on their rice usage. Food columnist and rice advocate Susan Nicholson signed her new book, Seven-Day Menu Planner for Dummies, which includes USA Rice's recipes and tips.
More than 8,000 nutrition and health professionals regularly attend the event. Rice continues to be popular and well-regarded among dietitians, a key audience for rice nutrition communications.

| Amateur Chef, 10, Wins Paella Competition |
 |
| Alexandra Coahonte |
TOLUCA, Mexico -- Last week, Alexandra Coahonte, a 10-year-old aspiring chef, won the amateur category of a paella competition sponsored by USA Rice Federation at Centro Espanol, a restaurant that specializes in paella. Coahonte, assisted by her mother, eloquently presented her dish to the judges, explaining how she prepared her paella using parboiled rice. She was the only child to enter the competition, which also included culinary students as well as amateur and professional chefs.
Working with Mexican schools, USA Rice educates children about rice preparation, nutritional benefits and easy rice recipes. Teaching children about healthy eating is especially important because Mexico has the second-highest obesity rate in the world.
Coahonte and her winning recipe will appear in a future USA Rice cooking magazine as part of the "Kids in the Kitchen" marketing campaign, which will encourage more children to cook with rice.
