USA Rice's Judy Rusignuolo and Adam Simmons.
|
NASHVILLE, TN -- USA Rice Federation last week participated in the School Nutrition Association (SNA) Annual National Conference, the nation's largest K-12 school foodservice meeting and trade show, attracting more than 7,000 foodservice professionals.
The conference featured educational sessions on the new school meal standards that require more whole grains beginning in 2012. In addition SNA's new Chef's Table panel discussed how to make meals healthier and cost-effective. "After two generations of moving away from scratch cooking in schools, we are making strides in teaching cooking methods and we are having a dialogue with farmers to increase awareness and serve more locally grown foods in school meals," Fayetteville, AR, Food Service Director Adam Simmons said.

USA Rice hosted an exhibit, distributed new kid-friendly rice recipes and announced its "Healthy Rice Bowl" contest, which will launch during September National Rice Month. The meeting also offered an opportunity to connect with U.S. Department of Agriculture (USDA) officials and survey school foodservice decision-makers on rice usage and efforts to incorporate more brown rice in school meals to satisfy new USDA nutrition guidelines.
USA Rice continues to leverage child nutrition initiatives and works closely with schools and foodservice management companies to educate menu planners, teachers and students on the benefits of enriched white and whole grain brown rice in school meals.
