West Coast Brandied Rice

Servings: Makes 8 servings.
1 cup firmly packed brown sugar
1/2 cup butter or margarine
2 apples, cored and chopped
1 cup golden raisins
1/2 cup brandy
5 cups cooked brown rice*
1 cup chopped walnuts
1 1/2 teaspoons ground cinnamon
1 pint vanilla ice cream
Combine brown sugar and butter in large skillet. Cook over medium heat until sugar is dissolved. Stir in apples, raisins and brandy. Cook until apples are crisp-tender, stirring constantly. Fold in rice, walnuts and cinnamon. Serve topped with vanilla ice cream.
*Medium or long grain white rice may be substituted.
