Arroz con Fideo

Arroz con Fideo is a comforting rice dish made with rice, cooked with lightly toasted pasta for a mild, savory flavor that students enjoy. By using flavorful stocks and kid-friendly spices, this versatile dish can be easily customized to fit different menus and pairs well with roasted or grilled chicken, seasoned beans, or steamed vegetables like corn, peas, or carrots for a balanced K-12 meal.

Ingredients

For 25 Servings

  • 4 cups brown parboiled rice
  • 2 cups spaghetti pasta
  • ¼ cup canola oil
  • 6 cups water
  • 3 tbsp vegetable base
  • 1 tbsp fajita blend seasoning

For 50 servings

  • 8 cups brown parboiled rice
  • 4 cups spaghetti pasta
  • ½ cup canola oil
  • 12 cups water
  • 6 tbsp vegetable base
  • 2 tbsp fajita blend seasoning

 

Directions

For 25 Servings

  • Staging Vegetable base. In a large pitcher, put the water, dry ingredients and vegetable base; stir to dissolve, set aside until ready to use in recipe.
  • Preparing in Oven. Preheat oven to 375 degrees. 
  • In a 2-inch hotel pan.  Place the oil and the spaghetti pasta (broken into 1-inch pieces) and sauté for 2 to 3 minutes or until the pasta is golden.
  • Add the rice, stir with spoon and sauté for additional 1 minute.  Add the vegetable stock or water.  Cover with foil and place it in preheated oven.  Cook for about 25 minutes or until the rice is tender.
  • Remove from the heat, let it rest for 5 minutes covered.
  • Hot hold recipe at 140 degrees or higher

For 50 Servings
