Chocolate Mousse Rice

This silky Chocolate Mousse Rice transforms cooked white rice into a decadent, no-bake dessert. With just a blender and a handful of ingredients, you can create a rich chocolate treat that chills to perfection in the fridge.

Ingredients

  • 1 cup dark chocolate chips
  • 1 cup cooked  white rice
  • ½ cup hot water, plus more if needed
  • Cocoa powder, for dusting
 

Directions

  • Add chocolate chips into a microwave-safe bowl. Microwave for 1 minute, then stir.
  • Into a blender, add in the cooked rice, melted chocolate, and ½ cup hot water. Blend until very smooth, adding more hot water if needed.
  • Pour the chocolate mixture into a small baking dish and spread evenly. Place into the fridge for 2-3 hours to set. Top with cocoa powder if using, and serve!
