Cranberry Orange Rice Snack Bars

Ingredients
- 2 cups cooked U.S.-grown brown rice, cooled
- ¼ cup oat flour
- 2 tbsp ground flaxseed
- ½ cup creamy nut butter
- ¼ cup honey or maple syrup
- 1 tbsp orange zest
- ⅓ cup dried cranberries, chopped
- ⅓ cup toasted pumpkin seeds
- ½ tsp vanilla extract
- ¼ tsp salt
- ¼ cup white chocolate chips, melted with 1 tsp coconut oil
Directions
- Preheat oven to 350ºF and line an 8×8 pan with parchment.
- Blend rice, oat flour + flax until mostly smooth.
- Add nut butter, honey/maple, zest, cranberries, seeds, vanilla + salt. Blend again.
- Press mixture firmly into the pan.
- Bake 25–30 minutes, then cool for 10 minutes.
- Drizzle with white chocolate and freeze 10–20 minutes to set.
- Slice into 12 bars and enjoy!
