Ingredients

  • 2 cups cooked U.S.-grown brown rice, cooled
  • ¼ cup oat flour
  • 2 tbsp ground flaxseed
  • ½ cup creamy nut butter
  • ¼ cup honey or maple syrup
  • 1 tbsp orange zest
  • ⅓ cup dried cranberries, chopped
  • ⅓ cup toasted pumpkin seeds
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup white chocolate chips, melted with 1 tsp coconut oil

Directions

  • Preheat oven to 350ºF and line an 8×8 pan with parchment.
  • Blend rice, oat flour + flax until mostly smooth.
  • Add nut butter, honey/maple, zest, cranberries, seeds, vanilla + salt. Blend again.
  • Press mixture firmly into the pan.
  • Bake 25–30 minutes, then cool for 10 minutes.
  • Drizzle with white chocolate and freeze 10–20 minutes to set.
  • Slice into 12 bars and enjoy!
