Basil Tomato Rice Salad

Ingredients
- 2 tablespoons olive oil
 - 2 tablespoons cider vinegar
 - 2 teaspoons fresh basil leaves*, chopped
 - ½ teaspoon salt
 - ¼ teaspoon ground black pepper
 - 3 cups cooked rice, cooled
 - 2 medium tomatoes, chopped
 - 1 medium cucumber, peeled, seeded and chopped
 - 1 small red onion, chopped
 
Directions
- Whisk together oil, vinegar, basil, salt and pepper in large bowl. 
 - Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
 
Recipe Notes
*Substitute 1 teaspoon dried basil for fresh.
