Country Breakfast Cereal

Ingredients

  • 1 cup uncooked brown rice
  • ¾ teaspoon salt
  • ½ cup dried cranberries or raisins
  • 1 teaspoon ground cinnamon
  • 2 ¼ cups water
  • 3 cups fat free milk
  • 2 cups peaches, diced
  • 1 cup (4 ounces) slivered almonds

Directions

  • Combine rice, salt, cranberries and cinnamon with water 2- to 3-quart saucepan. Bring to a boil; stir. Reduce heat, cover, and simmer 40 to 50 minutes, or until rice is tender and liquid is absorbed. Fluff with fork.
  • Top with milk, peaches, and almonds.
