Ingredients
- 2 cups cooked rice, cooled to room temperature
 
- 1 cup cooked black beans
 
- 1 cup fresh tomato, chopped
 
- 4 ounces cheddar cheese, shredded
 
- 1 tablespoon fresh parsley, chopped
 
- ΒΌ cup prepared Italian dressing (any type may be used)
 
- lettuce leaves
 
Directions
- In large bowl, combine rice, beans, tomato, cheese and parsley. Pour dressing over rice mixture; toss lightly. Serve on lettuce leaves.
