Italian Brown Rice Salad

  • 3 cups cooked medium grain brown rice
  • 8 ounces prepared marinated bocconcini* with sun dried tomatoes, coarsely chopped
  • ½ cup hot capicola ham, finely chopped
  • ½ cup prosciutto, finely chopped
  • ⅓ cup pine nuts, lightly toasted
  • 2 tablespoons fresh basil, finely chopped
  • pinch of red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper


  • In a large bowl combine the rice, Bocconcini (including the marinade), Capicola, Prosciutto, pine nuts, basil and red pepper flakes. Season the salad with the salt and pepper; serve at room temperature.

Recipe Notes

Marinated Bocconcini is mozzarella balls and usually sun-dried tomatoes in an Italian dressing. It is usually found in the deli section of most large supermarkets.
