Toasted Garlic Rice

  • 1 cup vegetable oil
  • 3 quarts long-grain rice, cooked
  • 1½ cups garlic, minced
  • 6 cups carrots, ¼ inch dice
  • 6 cups scallions, grilled, rough chop, whites reserved
  • 6 cups broccolini, grilled, rough chop
  • 2 tablespoons salt
  • 2 tablespoons black pepper


  • Heat oil in a tilt skillet over medium-high heat. Add rice, garlic, carrots, scallions, broccolini, salt, and pepper. Cook over medium-high heat for 5 to 7 minutes or until rice is lightly browned. Transfer rice to a steam table and hold hot for service.
  • To make 1 portion, scoop 1 cup toasted rice onto a heated plate, and garnish with 2 grilled scallion bottoms. Garnish with lemon wedges (optional).
