Ingredients
- ¾ pound pork tenderloin, cut into strips
 
- 1 tablespoon vegetable oil
 
- 1½ cups fresh mushrooms, sliced
 
- 1 large green pepper, cut into strips
 
- 1 zucchini, thinly sliced
 
- 2 ribs celery, sliced
 
- 1 cup carrots, thinly sliced
 
- 1 clove garlic, minced
 
- 1 cup chicken broth
 
- 2 tablespoons reduced-sodium soy sauce
 
- 1½ tablespoons cornstarch
 
- 3 cups hot cooked rice
Directions
- Brown pork strips in oil in large skillet over medium-high heat.
 
- Push meat to side of skillet. Add mushrooms, pepper, zucchini, celery, carrots and garlic; stir-fry approximately 3 minutes.
 
- Combine broth, soy sauce and cornstarch; add to skillet and cook until thickened.
 
- Serve over rice.
