West Coast Brandied Rice

Ingredients
- 1 cup firmly packed brown sugar
 - ½ cup butter
 - 2 apples, cored and chopped
 - 1 cup golden raisins
 - ½ cup brandy
 - 5 cups cooked brown rice
 - 1 cup walnuts, chopped
 - 1½  teaspoons ground cinnamon
 - 1 pint vanilla ice cream
 
Directions
- Combine brown sugar and butter in large skillet. Cook over medium heat until sugar is dissolved.
 - Stir in apples, raisins and brandy. Cook until apples are crisp-tender, stirring constantly.
 - Fold in rice, walnuts and cinnamon.
 - Serve topped with vanilla ice cream.
 
Recipe Notes
