Ingredients
- 1 pound ground Italian sausage
 
- 1 tbsp olive oil 
 
- 1 yellow onion, sliced
 
- 1 (32oz) carton chicken broth
 
- 1 large butternut squash, cut into cubes
 
- 2 cloves garlic, minced
 
- 3 cups chopped kale 
 
- 2 cups basmati rice, cooked
 
- ¼ tsp seasoned salt
 
- ½ tsp paprika
 
- ground pepper to taste
Directions
- Add 1 tablespoon of olive oil to a large pot over medium heat. Add in the onions and Italian sausage. Cook until the sausage is cooked through, and the onions are slightly translucent. 
 
- Pour in chicken broth and add in the butternut squash and garlic. Cover and reduce to a simmer, cooking for about 20 minutes or until the butternut squash is tender. 
 
- Next, add in the kale and the cooked U.S-grown basmati rice. Stir, cover, and cook for an additional 5-7 minutes, or until the kale is tender. 
 
- Season with seasoned salt, paprika, and pepper to taste. Enjoy!
