Gingered Rice Shrimp Salad

Ingredients
- 3 cups cooked medium grain rice
 - 2 cups frozen cooked shrimp, thawed, peeled, deveined
 - 1 cup snow peas, blanched
 - ½ cup green onions, thinly sliced
 - ½ cup red bell pepper, julienned
 - 1 teaspoon salt
 - 1 teaspoon ground black pepper
 - ¼ cup peanut oil
 - ¾ cup Asian-flavored dressing
 
Directions
- Combine rice, shrimp, snow peas, green onion, bell pepper, salt and pepper in a large bowl. Add oil and toss until mixture is evenly coated. Drizzle dressing over salad and toss gently.
 
Recipe Notes
Blanch peas 1-2 min in large boiling pot of salted water. Drain and serve immediately, or if using later, transfer to bowl of ice water.Nutrition Facts
